My Week on Wednesday and Crock Pot Recipes

Welcome to another My Week on Wednesday! Remember how I said last week that we were changing things up a little bit for My Week on Wednesday? Instead of just me listing a bunch of random blogs that I’ve visited, we are going to have weekly themes — last week’s was Preserving Summer.

The idea behind this great, glorious, more-work-for-me idea is that a month from now on when you’re thinking… Hey, didn’t Christine post a recipe about drying tomatoes, you don’t have to go back through ages of My Week on Wednesday posts; you could look back to the Preserving Summer day and find it. Awesome, right? Assuming that it works, of course.

We’re going to try it for this season. Let me know what you think, and after Halloween we’ll decide whether to keep it like this or go back to the old way. Okay? 🙂

And this week’s theme is Crock Pot Recipes.

But before we get to it, you want to know what I’ve been doing this week, right? Actually I haven’t been doing too much. Or I have been doing way too much. Take your pick.

Once Upon a Time in a Bed of Wildflowers

The dog and I did go for a long, relaxing walk along the beach though. The sunlight shimmered, the water was warm, the leaves were changing, and the dog and I were the only ones to enjoy it. It was a truly delightful morning, and I NEEDED it.

See, my husband is on a seven week business trip to Germany. And let me tell you — hats off to all the single parents out there. This is hard freaking work!

It’s the little things that get me. Like the fact that the pans don’t just magically wash themselves after dinner. Or that I have to turn on the first light of the morning… or turn off the last light of the evening. And, also, I have this disturbing urge to chat with telemarketers and random people who walk past my house.

So for the past couple of weeks I’ve been searching out ways to streamline my life a little.

(Sort of like the very opposite of this new My Week on Wednesday post format — HA!)

But busting out the crock pot is — for real — a great way to streamline things.

I have two: this 6 quart one (affiliate link), and an old four quart one that I have had for so long that they don’t even make one exactly like it anymore! They both live on my counter — the big one in the kitchen, the little one in the pantry — because I use them so often that it seems silly to put them away. AND I plan to start using them even more often!

Because for the price of a little bit of work in the morning, or sometimes the night before, you have a beautiful, healthy meal waiting for you when you get home from work or picking the kids up from school.

Dinner from Crock Pot? Absolutely!

Old Fashioned Chicken and Dumplings in a Crockpot — Um, hello. I can almost smell this deliciousness, and my mouth literally watered reading this recipe. I LOVE Chicken and Dumplings!

Slow Cooker Lentil Black Bean Chili — This looks delicious; thick and rich and warming. In between lentil recipes, I always sort of forget how much I like them… so this is definitely going on my List! It’s vegetarian, too.

Quick and Easy Chili — A Prepper Recipe — This would be great way to use all those tomatoes that I canned! I bet it would be excellent with my frozen peppers, too!

Tomato-Curry Rice in the Crock Pot — Another delicious use for my home canned tomatoes! 😉

Slow Cooker Chicken Curry — Sounds delicious!

Simple, Easy, Crockpot Cheesy Potatoes — Okay. First of all, this is fun to say. And, if I think about it, shouldn’t all dishes be as fun to say as they are to eat? And secondly it sounds amazing. Personally, I wouldn’t skimp on the cheese — go for the full fat stuff, baby! 😉

Crock Pot Cashew Chicken — Yummy!

Farmhouse Beef and Bacon Stew — We’ve made this and loved it! 🙂

This one is a favorite, too! Best Whole Chicken in a Slow Cooker.

Butter Chicken in the Crock Pot — This one’s mine, so naturally I think it’s fabulous!

Indian Spiced Split Peas — Another one of mine! I made this in the springtime with fresh radish leaves. But it would be just as amazing in the fall with late spinach or kale. Or in the winter with frozen greens — or even none at all.

Easy Slow Cooker Pulled Pork — This is great because it can be frozen and used later in Mexican Style Pulled Pork — and with that you have crock pot and make ahead. Talk about streamlining!

Pumpkin Apple Steel Cut Oats in the Crock Pot — Sounds delicious, and perfect for fall, too! 🙂

Slow Cooker Fudge — We made this last Christmastime. And it was delicious! 🙂

Easy-Peasy Yogurt — Another one of mine. This is basically what the four-quart crock pot does now. It makes yogurt for us. Isn’t that nice of it?
